Great chicken is both juicy and flavorful - this hits the nail on the head in both of those categories. Pesto is one of my favorite sauces, basil and toasted pine nuts give a fantastic fresh and nutty flavor that pairs extremely well with poultry. As you all know, I like to use citrus when I can, so I've added some lemon zest to give citrus notes throughout the chicken. This pairs very well with the floral notes of the basil, and contrasts perfectly with the rich fats of the cheese. I ...
BBQ Pulled Chicken Sliders
Remember the BBQ Pulled Chicken recipe that I did in the slow cooker the other day? Well it made quite a lot of food, and there was certainly leftovers to go around. I wanted to put something nice together that makes the leftovers seem like a new dish completely. All in all, this takes pretty little effort to put together. Just mixing together the batter for the buns, and the rest is almost auto-pilot cooking. From start to finish it took me maybe 30 minutes - so this would be a great meal if ...

Thai Style Low Carb Peanut Chicken
This is a beautiful dish that combines elements of earthy peanuts, acidic citrus, and umami; finishing off with a slightly sweet and spice from the chili. If you're a fan of Asian style peanut sauces (think satay), then you'll love this dish. Plus, it sits at just under four net carbs per serving! If you have the carb allowances for the day, you can pair this with a side of cauliflower fried rice to complete the meal. We chose broccoli, which when steamed al dente, adds a fantastic crunch ...

Superbowl Sunday Buffalo Strips
Sunday is soon coming, and that means the Superbowl is almost here! I've got my money on the Broncos this year, that offense is not going to be stopped. Who do you think's going to take home the trophy? Anyway, we need some food for Sunday right? I figure I'm going the classic route and doing some buffalo chicken strips for it. They're crunchy, full of flavor, and absolutely delicious! You can use whichever hot sauce you want to, I personally went with Frank's Buffalo Wing Sauce because it's ...

Keto Style Szechuan Chicken
Spicy with a hint of sweet. This chicken will knock your socks off and you'll continue to eat it because it's fantastic! For me, the garnish of just a few gratings of lime and lemon really took it over the edge. The subtle citrus notes as I was eating added a great contrast in flavors through the dish. I tried to stay away from Asian food, but it just never works out! I wanted something that was both a bit sweet and very spicy. While I was making the sauce for this it didn't taste extremely ...

Pork Loin Ribs with Keto BBQ Sauce
I wanted to cook a lot of ribs for a little get together we were having this weekend. I went with 3 racks of ribs, but if you don't want to do that many, just scale the recipe accordingly. Remember that 1 Tablespoon = 3 teaspoons! These ribs came out absolutely awesome! The BBQ sauce tastes like a sauce you'd get at a restaurant, maybe just not as sweet (which is the way I like it). It's smokey, with hints of sweet and tangy. So, what did the damage come out to? Only 1.5g carbs per ...

Omnivore Burger with Creamed Spinach and Roasted Almonds
This scrumptious burger is not what it seems. Mushrooms, peppers, and onions run through the meat to give a decadent taste that you may have never experienced before. The rich flavors of vegetables mixed with the savory flavors of the spices come together at a beautiful medium, giving you a delicious burger! You might be thinking that mushrooms is a terrible idea to put in burgers, but they're really awesome. They absorb flavors really well, meaning they will absorb a lot of the fats and ...

Applewood Seared Pork Chops
I haven't made pork chops in a while, so forgive the sear (or lack of) that I got on the chop. I had to cook 4 chops in a pretty small pan, so I didn't get the heat distribution I wanted. Either way, the recipe turned out delicious and the seasoning is fantastic! This will be done, fridge to plate, in about 25 minutes. This one used mostly pre-made seasonings, which I have a lot of for some reason - but it was really fast to prep and cook everything. It goes great with the bacon and brussels ...

Cinnamon and Orange Beef Stew
So I decided to go a little bit out of the ordinary last night and make a beef stew that many of you might not have experienced before. The rich flavors of citrus and beef stock combine with the deep elements of cinnamon and fish sauce to create a delicious meal. We start by searing our meat in a cast iron skillet, letting the wonderful fats caramelize and coax out the flavor. We then add all of our aromatics to cook for a moment before de-glazing with our citrus. After 5 hours in a crock ...
