With St. Patty’s day coming up, it’s time to figure out how to get as much alcohol into our food as possible. Not only will we be drinking it, but we need to be eating it too. Right…RIGHT?
Fine, even if you don’t want to drink your food, this is delicious. Very nice hints of vanilla roll through and the alcohol just comes through with enough flavor to balance it out. It will be a little less moist than the other cakes, but it pairs VERY well with a dollop of whipped cream on the top (and a shot on the side 😉 )!

For some odd reason, I just love sticking these in the fridge and letting them get cold overnight. In the morning they’re more moist (which seems to happen often with almond flour goods), they’re cold…and with heavy cream on top they’re amazing. I’m not kidding you, pour some heavy cream on top of a cold mug cake and mix it all together, and you have some almost unbeatable ice-cream cake type thing going on!
Yields 1 Vanilla Whisky Keto Mug Cake
The Preparation
Base:
- 1 large egg
- 2 tablespoons almond flour
- 1 tablespoon erythritol
- 7 drops liquid stevia
- 2 tablespoons butter
- 1/2 teaspoon baking powder
Flavor:
- 1 tablespoon scotch
- 1 tablespoon almond flour
- 2 teaspoons coconut flour
- 1/2 teaspoon vanilla extract
The Execution
1. Get your mug ready!
2. Mix together 1 Large Egg, 2 Tbsp. Honeyville Almond Flour, 1 Tbsp. NOW Erythritol, and 7 drops Liquid Stevia.
3. Add 2 Tbsp. Butter and 1/2 tsp. Baking Powder to the mug and mix it very well together.
4. Now, time to add the flavors! 1 Tbsp. Whisky or Scotch. Whatever you want to use. 1 Tbsp. Honeyville Almond Flour, 2 tsp. Coconut Flour, and 1/2 tsp. Vanilla Extract. Mix this together well.
5. Let’s cook this thing – 85 seconds in the microwave on high. Power level 10 is what I used (the maximum).
6. Lightly bang the mug against a plate and it will dislodge. Server with whipped cream…or a shot of the same whisky/scotch 😉
This makes a total of 1 serving of Keto Vanilla Whiskey Mug Cake. The serving comes out to be 447 calories, 39.1g fats, 3.9g net carbs, and 11.6g protein.

Keto Vanilla Whiskey Mug Cake
Ingredients
Base:
- 1 large egg

- 1 tablespoon almond flour
- 2 teaspoon coconut flour
- ½ teaspoon vanilla extract
Instructions
- Get a mug ready! Add the egg, almond flour, erythritol, and stevia. Mix until combined.
- Add the butter and baking powder to the mug and mix until well combined.
- Now, time to add the flavors! Add a shot of whiskey or scotch. Next, add almond flour, coconut flour, and vanilla extract. Mix to combine.
- Microwave on high (power level 10) for 85 seconds.
- Turn the mug upside down and lightly tap it against a plate. The cake should slide out in one piece.

If I wanted to multiply this and put it in a cake pan and put it in the oven what temp/time combo would you suggest I start with?

I’m not 100% sure but someone else made them in the oven at 350 for 10-12 minutes. Hope that helps!

Does the brand of almond flour matter? I haven’t found Honeyville Almond flour…
For the mug cakes, I find the brand doesn’t matter too much. I find a difference when I do oven baking, though. The only difference is the color with the mug cakes I seem to find (since the normal one I used is Blanched, and many others are not).
Just gave this a go for the first time and it came out pretty well. Didn’t think a carb ‘free’ cake could taste so good!

What would an equivalent amount of dry stevia be?
found the answer to my stevia question. However, I see that you have listed 2 different measurements for the vanilla. In the one ingredient list it shows 1/4 tsp and in the other 1/2.
I just made this and it’s fabulous. I don’t adhere to Keto, but appreciate a grain free mug cake recipe. I used maple syrup instead of the whisky and sweeteners. It is a great base for strawberry shortcake.
I noticed the nutritional info is for 4T of almond flour, but the recipe only has 3T.
I omitted the whiskey and subbed with heavy cream. Made the perfect vanilla mug cake!

You should be able to use the same amount of Swerve. (1:1)
This came out great for me. I left it in the mug and topped it with halo top maple vanilla ice cream pecans and sugar-free maple syrup. It did have a very cakey texture for me.
Are we suppose to have the butter at room temperature?
Typically yes. If you want to, you can put the butter into the mug and microwave it for 5-10 seconds prior to adding the other ingredients.
