Classic beef stroganoff serves cubes of beef in a creamy sauce, served over rice or noodles. This ketofied version of the recipe also cuts down on its cost, by making use of ground beef. This ground beef stroganoff dinner is easy to make, and a wonderful tool to have for a quick family dinner.
This stroganoff uses mushrooms instead of the noodles. They have the perfect texture, but without the fuss of cauliflower rice or noodle substitutes. Though, adding a side of cauliflower rice would be great for this too!
Yields 4 servings of Keto Ground Beef Stroganoff
The Preparation
- 2 tablespoons butter
- 1 teaspoon fresh garlic, minced
- 16 ounces ground beef (80/20)
- salt and pepper, to taste
- 10 ounces cremini mushrooms, sliced
- 1 1/4 cups sour cream
- 1/2 teaspoon smoked paprika
- 1 tablespoon lemon juice
- 1 tablespoon fresh parsley, chopped
The Execution
1. Preheat a large skillet over medium heat then add the butter. Once the butter has melted and stops foaming, add the minced garlic. Cook the garlic by stirring frequently until it’s fragrant, then add the ground beef. Season with salt and pepper.
2. Continue cooking the ground beef and break up the grounds with a wooden spoon. Transfer the cooked beef to a bowl and set aside.
3. Drain most of the fat from the skillet, leaving just enough on the bottom to cook the mushrooms. Turn the heat back up to medium.
4. Add the mushrooms and water to the pan. Continue cooking until the water has reduced halfway, and the mushrooms are tender. Set the mushrooms aside.
5. Turn the heat down to low then whisk the sour cream and paprika into the skillet. Add the cooked beef and mushrooms back into the pan and stir together. Mix in the lemon juice and parsley then serve.
This makes a total of 4 servings of Keto Ground Beef Stroganoff. Each serving comes out to be 504 calories, 42.5g fats, 6.3g net carbs, and 23.2g protein.

Keto Ground Beef Stroganoff
Ingredients

- 1 ¼ cup sour cream
- ½ teaspoon smoked paprika
- 1 tablespoon lemon juice
- 1 tablespoon fresh parsley chopped
Instructions
- Preheat a large skillet over medium heat then add the butter. Once the butter has melted and stops foaming, add the minced garlic. Cook the garlic by stirring frequently until it’s fragrant, then add the ground beef. Season with salt and pepper.
- Continue cooking the ground beef and break up the grounds with a wooden spoon. Transfer the cooked beef to a bowl and set aside.
- Turn the heat back up to medium. Add the mushrooms to the pan. Continue cooking until the mushrooms are tender. Set the mushrooms aside.
- Turn the heat down to low then whisk the sour cream and paprika into the skillet. Add the cooked beef and mushrooms back into the pan and stir together.
- Mix in the lemon juice and parsley.
- Serve with a sprinkle of paprika over the top.







This needs mustard.. kind plain without it.
I add a little Frank’s RedHot Buffalo Wings sauce to mine.

If anyone does decide to do this, just make sure you consider the carbs from the bell peppers and onion along with the rest of the recipe.
I found this much too bland. I added about an extra tablespoon of paprika and a half teaspoon garlic powder. Great base but I had to spice it up some.

Just tried my first keto meal. Loved it. Had it over cauliflower rice. I could not add the lemon as someone had emptied my tree and I only had sweet paprika but it turned out fabulous. Would definitely cook this again even if I went off the keto diet.
