  • 2 medium celery, diced
  • 4 teaspoons fresh garlic, minced

The Execution

1. Prep all ingredients. Put the slow cooker on low setting.

2. Add chicken broth, onion, leek, celery, garlic, butter, salt, and pepper to the slow cooker. Cover and cook on low for 1 hour.

  1. Is the clam juice the drained juice from the clam cans or something separate? Also I do mostly meal prep because of work: can this be reheated? If so how long can I keep this in the fridge ? I love clam chowder and miss it from the time I used ro live in Connecticut.

    • It’s totally up to you. I personally just use the juice that the clams came in, but you can buy clam juice separately too (usually it’s a bit stronger in taste than what the clams come in). For reheating it, you can certainly do that. I’d say it keeps for around 5-6 days in the fridge, but I’d recommend eating it in 3-4 days. You can freeze leftovers, thaw in the fridge, and then re-heat on the stovetop over low heat. I hope you enjoy it!

    Will this fill my large crockpot “1/2 to 3/4 full,” as the manufacturer recommends, to keep it from burning?

    • It depends on the size of the crockpot. It will likely fill it to around 1/3 full, but that typically isn’t an issue.

        Hm — the crockpot is 6.5 quarts, and new to me; a lot of the negative reviews complain about food being burned, and are answered by users (and the manufacturer) discussing the necessity of having the crockpot at least half-full. Maybe I’ll try it on the stove first, and see how many quarts it makes. Looking forward to it!

    This looks great. I just got an instant pot, so I’m not well versed in turning slow cooker recipes to instant pot recipes. Anyone have any advice on how I would do that, or if its even possible with this recipe? Thanks!

    • I’d cook the bacon on sautee, and remove once crispy. Add the vegetables and cook in the bacon fat. Add the remaining ingredients and cook for 15-20 minutes. Release, then add the dairy products. Before serving, add the bacon back in.

    Of all the low carb clam chowder recipes I found, I chose this one because it included sliced leeks, which I love. I did some variation though. First, I decided to not use a slow cooker, as I wanted to manage the texture of the vegetables more closely. And I ended up with about 20 oz of clams (whole baby and chopped) and it was plenty clammy. Also, my wife and I have been on keto for over 6 years and in what I would call “maintenance” mode, so we do “cheat” on occasion when there is something we are really craving. Clam Chowder just isn’t right without some potatoes, so I peeled and diced two small red potatoes for the chowder. After the fact though, I saw another author that recommended using diced celery root for that potato texture (if doing this omit the other celery) and I will definitely try this next time I made this. Anyway, cooking the chowder in an enameled cast iron dutch oven, I first sautéed the vegetables in the butter, then added the cream cheese, clam juice, the potato or celery root, 5 or 6 sprigs of fresh thyme and cream and simmered until the cream cheese was entirely melted into the chowder and the potato was soft, but still a little firm. Then I added the clams and bacon and simmered a few minutes longer to meld the flavors. I removed the thyme sprigs and added a little bit of the leftover clam juice to get the perfect texture of the chowder. I was really please by how well the cream cheese worked to provide the right thickness without using a roux. The chowder was GREAT and I will make it again and again.
