Winter is on its way, so we thought we’d start dishing out some soups to keep you cozy. Luckily this filling dish is just what we needed. The cheesy and creamy soup is packed with chunks of cauliflower and finished off with crumbled bacon bits.

Cheesy Cauliflower & Bacon Soup

This recipe takes roughly 30 minutes to make, including prep and it’s easily made in one pot. Another upside is that you can add anything else you want into this soup – onions, chicken, jalapenos…anything!

The best part of this soup is that it makes so many servings and you can freeze it to take to work or keep for another day. It’s perfect!

Yields 6 servings of Cheesy Cauliflower and Bacon Soup

The Preparation

  • 1/4 cup olive oil
  • 1 teaspoon fresh garlic, minced
  • 1 medium cauliflower, chopped
  • 2 cups chicken broth
  • 1 cup water
  • 1 cup heavy whipping cream
  • 1 teaspoon xanthan gum
  • 1 1/2 cups cheddar cheese, shredded
  • 2 slices cooked bacon, Chopped

The Execution

1. In a deep pan, heat up 3/4 of the olive oil and the garlic on medium heat.

2. Once hot, add in the cauliflower.

3. Pour in the chicken broth and water, bringing it to a boil over high heat. Stir frequently.

4. Once it’s boiling, stir in the heavy whipping cream then turn the heat down to medium.

5. In a separate bowl, whisk together the rest of your oil and xanthan gum to make a slurry.

6. Drop your slurry into the soup and stir. It should start to thicken.

7. Little by little, add in your cheese, stirring it into the soup so it melts.

8. Whisk in your bacon and serve!

    Very delicious recipe! I used chicken bone broth and turkey bacon. Next time I may use regular bacon, but still very good!

    Hi Tyler – I’ve been doing the Keto thing for about 3 weeks now and found your site today. This recipe sounded delicious – I used the bone broth as well, and doubled the garlic (❤️❤️❤️garlic!). I love how the sauce came together, it was the perfect consistency…this was the 1st time I’d used or even heard of Xanthan Gum and I am super impressed. I only have one thing to say – I am a high flavor kind of gal and I found it to be a bit bland for my taste. I could always add more garlic, lol, but thought I would seek your expert opinion for adding a bit more flavor. Any suggestions?

    • For some added flavor I’d cook the bacon from raw and use the fat from the bacon instead of olive oil. When I add the cauliflower, I’d brown it a bit more than usual to get some extra flavor as well. Season with plenty of salt and pepper. You can also add some spices if you wish when you add in the cream. More garlic would help, too 🙂

    This says it makes 6 servings, but how much is a serving exactly? I’ve had the same trouble with several of these recipes.

    • We just use the serving sizes as an estimate based on how many calories the total recipe is. The serving sizes might change depending on your calorie needs. We typically weigh out the full recipe, the portion it out based on equal weight. If you’re eating the whole recipe yourself, you can usually just eyeball it and be fine.
