With spring having just ended and the summer heat quickly approaching, a refreshing and filling salad is something that really fits the bill. A lot of people tend to think that salads are boring, plain, and only really eaten by people on a “diet”. I tend to load my salads up, and bring the flavor with it – it’s a great vehicle for many different tastes. Plus, the dressing you use is going to be loaded with fats, which means the macros are perfect for keto. Using the 5 Minute Keto Raspberry Vinaigrette as the dressing, we achieve a really robust and well-rounded flavor profile in this salad.
The acidity and sweetness of the raspberry vinaigrette really comes through in this salad – pairing perfectly with the slight bitterness of the mixed greens. It’s the perfect balance of flavors and has fantastic texture coming from the crispy bacon and roasted pine nuts. The parmesan tops everything off, giving a slightly salty and rich flavor that ties everything together.
Yields 1 Serving of Keto Mixed Green Spring Salad
The Preparation
- 2 ounces mixed greens
- 3 tablespoons roasted pine nuts
- 2 tablespoons 5 Minute Keto Raspberry Vinaigrette
- 2 tablespoons shaved Parmesan
- 2 slices bacon
- Salt and pepper to taste
The Execution
1. Cook bacon until very crisp. I let mine slightly burn on the edges to give the salad a slight addition of bitter notes in some bites.
2. Measure out your greens and set in a container that can be shaken.
3. Crumble bacon, then add the rest of the ingredients to the greens. Shake the container with a lid on to distribute the dressing and contents evenly.
4. Serve and enjoy!

Keto Mixed Green Spring Salad
Ingredients
- 2 ounces mixed greens

Instructions

So this looks great but if you put it into the Myfitnesspal app it shows up with way out of wack stats like 1,200 cals. Often I find the meals in myfitnesspal don’t exactly mesh with the data you’ve shared in regards to nutrition info. The meals I’ve looked at are: FatBomb Bars, Bannana Bread Smoothie, Bacon Avacado Muffins, Peanut Pancakes, Jalepeno Cheddar Waffle, Lemon Poppyseed Muffin. So, do you have a mfp account? Can you share recipes on the app?
I do all of my macros through checking multiple MFP sources and finding either exact or very close matches to the packages of ingredients I purchase. Depending on brand, it will always change, but I can’t help that. Unfortunately I don’t have time to add each recipe to MFP, but I know many of the ruled.me recipes are listed in there.
This looks tasty, but it doesn’t look very filling. Any ideas on how to make it more satiable?
