Only 5 ingredients are required to create our keto mug cheesecake, and even less steps are required to get a healthy, low-carb sweet treat that is the perfect size for portion control. 

Sometimes you feel like making a decadent dessert with multiple preparation steps from scratch, and other times you want something quick and easy to satisfy that sweet tooth. If the latter is the case, our keto 5 ingredient mug cheesecake is something you’ll need to keep on rotation to keep on hand when the craving hits. All you’ll need is a mug and a microwave!

The distinctive “cheesecake” flavor comes from the cream cheese, which is completely softened before the other ingredients are added. When heavy cream, vanilla extract, an egg, and some allulose are combined, you get a deliciously creamy, cheesecake-like texture that doesn’t require any bake time or fridge time beforehand. 

One thing to keep in mind when preparing this mug cheesecake is to monitor the mixture when it’s inside the microwave. Depending on the type of microwave you have and the power setting it’s on, the cheesecake may cook faster than normal—and you don’t want any burning to occur. We recommend about 90 seconds and ensuring the cheesecake is completely cooled before you empty it onto a plate (or eat it straight from the mug, we won’t tell).

The Preparation

  • 2 ounces cream cheese
  • 1 large egg
  • 1 tablespoon heavy cream
  • 1/2 teaspoon vanilla extract
  • 1 1/2 tablespoons allulose

The Execution

1. Gather and prep all ingredients.

2. Place the cream cheese in a microwave-safe mug and microwave for 15-20 seconds to soften completely.

3. Whisk the egg thoroughly until smooth. Then, add into the cream cheese.

4. Add the heavy cream, vanilla extract, and allulose.

5. Mix everything together well until smooth and no lumps are present.

6. Microwave for 70-90 seconds or until cheesecake is just set. It should be slightly jiggly in the middle. Optionally remove the cheesecake from the mug by running a knife around the edge and inverting it onto a plate.

Refrigerate cheesecake for 15-20 minutes or eat while hot. Enjoy!

    Made it this morning. I’m going to have to play around with my microwave settings as it did get a bit curdled during cooking. Tasty still! Will make again.
