I found this recipe on a low carb site and decided to try it out for myself. It looked like it might work, but I definitely had my doubts. I mean a cheese pizza crust made out of cream cheese? Seemed farfetched.
In reality? This cheesy cheese pizza crust actually turned out pretty awesome. Granted, when it’s hot, it doesn’t hold it’s form so great. But when you let it cool down and solidify a bit, it makes a great pizza crust!
It might be a little bit garlic-y for your taste, so if you’re not a huge fan of garlic, I suggest cutting that in half (or less).
Yields 8 slices.
The Preparation
- 8 ounces cream cheese, softened
- 1/4 cup parmesan cheese, grated
- 2 large egg
- salt and pepper, to taste
- 1 teaspoon garlic powder
- 8 ounces ground beef
- 8 ounces chorizo sausage
- 1/2 teaspoon cumin
- 1/4 teaspoon basil
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon italian seasoning
- 3/4 cup low-carb tomato sauce
- 1 cup shredded mozzarella
The Execution
1. Preheat your oven to 375F
2. In a mixing bowl, put your cream cheese, parmesan cheese, eggs, pepper, and garlic.
3. Mix it well with a hand blender until smooth.
4. Spray a 9×13″ baking pan with cooking spray (or rub it with butter). DON’T FORGET TO DO THIS! I accidently put all my crust batter in the pan before I sprayed it and had to scrape it all out, spray it, and put it back in. It was not fun! Spread your mixture in the pan until it’s evenly distributed.
5. While you are waiting for your oven to preheat, get a pan on the stove and add your meat.
6. Let it cook down for a little bit.
7. Add your spices: cumin, basil, turmeric, salt and pepper, and a bit of Italian seasoning.
8. Let it cook down and leave it on the side.
9. Put your pizza crust in the oven and cook for 12-15 minutes. You will see on the top that it is holding together, and the sides have pulled away from the pan.
10. Let this cool for about 10 minutes.
11. Once the crust has cooled, you can put some low carb tomato sauce on there, and spread cheese on it.
12. Put it in the oven for 10 minutes, and once the cheese has started to melt, add your meat mixture. Put this back in the oven for 3-5 minutes more, on broil.
13. Once you are ready, take the pizza out of the oven and let it cool for a while. The cooler it is, the more solid it will become (also making it a lot easier to eat).
14. Slice it up, and serve. Enjoy!
This makes a total of 6 servings of Cheesy Cheese-Crust Pizza. Each serving comes out to be 508 calories, 42g fats, 4.8g net carbs, and 26.5g protein.

Cheesy Cheese-Crust Pizza
Ingredients
- 8 ounce cream cheese softened

- 1 cup shredded mozzarella
Instructions
- Preheat oven to 375F. In a large mixing bowl add the cream cheese, parmesan, eggs, pepper, and garlic.
- Using a hand mixer, combine until smooth.

- Heat up a pan on the stovetop and add in the ground beef and chorizo.
- Let these cook down for a little bit, stirring occasionally.
- Add the cumin, basil, turmeric, salt and pepper, and a bit of Italian seasoning.
- Let it cook down more, stirring occasionally, and set aside once done.
- Place the pizza crust in the oven and bake for 12–15 minutes. You should see the top holding together, with the sides pulling away from the pan.
- Let cool for about 10 minutes. Once cooled, spread the low carb tomato sauce over all.
- Sprinkle the shredded cheese evenly over the top.
- Place back in the oven for 10 minutes. Once the cheese has started to melt, remove and turn oven to broil. Add the meat mixture to the top of the pizza. Return to oven and broil for 3–5 minutes.
- Remove from the oven and let cool for a while. The cooler it is, the more solid it will become (making it a lot easier to eat).
- Slice it up and serve. Enjoy!

What is the brand and weight of the chorizo you use?

If I remember correctly it was 2 oz Chorizo. It is just a local store brand of chorizo that I get at my grocery store, but you can pretty much use any type you want as long as the carb counts are okay on it 🙂

One thing I noticed is you mentioned to add pepper with the cheese but there isn’t an amount listed. I just cracked some in the bowl before I mixed. Also, no cheese listed in the ingredients or in the nutrition table. Not sure if you left it out as its more discretion anyway, but thought I’d point it out!

Yeah, in this recipe I kind of left it up to you to complete the macros. I kind of did this one on a whim and didn’t measure so I didn’t want to give incorrect measurements in my macro counts. Thank you for pointing that out 🙂

I make My Pizza Crust by adding equal amounts of cooked chicken breast and cheese(I like a mix of Italian cheeses w moz) garlic powder, oregano and S&P to a food processor, then warm in micro just a bit, form into crusts on Parchment Paper(very important cuz it sticks to everything else) and bake til brown n set, top w fav pizza topppings and bake again til melted…they freeze GREAT…and it can be picked up and actually eaten like real pizza 🙂 any chance you could try it and break it down fro Us 🙂
