These breakfast roll ups are made with eggs stuffed with bacon, sausage, and cheddar cheese. It’s a filling keto breakfast, and the ultimate keto fast-food. Wrap them up and take them to go! These are easy to make ahead of time and store in the fridge, plus they are very low-carb because there are no tortillas to mess with making them perfect for keto egg fast.
Don’t stress too much if you can’t get them all to roll properly. Worst case scenario, you’ll end up with a breakfast taco, or a scramble.
If you don’t have bacon and sausage already cooked, these may take a little extra time to make – but still so very worth it. I recommend setting aside some bacon and sausage while cooking other breakfasts earlier in the week. (Though, I know how hard it can be to end up with “extra bacon.”)
You can obviously customize these to suit your taste with different spices, cheese, and fillings. You can even stuff some veggies inside, like roasted bell peppers.
Yields 5 servings of Ultimate Breakfast Roll Ups
The Preparation
- 10 large egg
- salt and pepper
- 1 1/2 cups cheddar cheese, shredded
- 5 ounces bacon
- 5 ounces breakfast sausage, shaped into patties and cooked
The Execution
1. Pre-heat a nonstick skillet over medium-high heat. Whisk together 2 of the eggs in a bowl. Once the skillet is hot turn the heat down to medium-low, then add the eggs. If you need to you can use some non-stick cooking spray. Season the eggs with salt and pepper.
2. Cover with a lid and allow to cook for a few minutes, until the egg is cooked almost all the way through.
3. Sprinkle on about 1/3 cup of cheese all over the egg. Lay down a strip of bacon, then break a sausage patty in half and lay that down on top.
4. Carefully roll the egg over the fillings, usually I can fold it in thirds. It will look a little bit like a taquito. Sometimes I have a hard time rolling it, so I fold it over the first time and use my spatula to keep it there until the egg molds onto the shape. Then I carefully fold it over again.
5. Set aside the breakfast roll.
6. Repeat steps 1-4 to create 4 more roll ups. There are five roll ups total.
This makes a total of 5 servings of Ultimate Breakfast Roll Ups. Each serving comes out to be 513 calories, 42.2g fats, 2.5g net carbs, and 29.5g protein.

You could just skip out on the bacon if you don’t have it. It will change the macros so keep that in mind.

Can these be cooked and frozen?
They can be, but the egg may get a strange texture when re-heated.
What I like about these is that I can make them fast, wrap them in foil, and take them to eat either on my way to work, or when I have time during my morning at work. AND I don’t feel deprived eating them, especially on Fridays, when teachers bring chorizo, potato, cheese, and egg burritos, and leave them there to call out to me in the teacher’s lounge! Thank you!
I am just beginning my journey with the keto diet. I don’t eat pork at all due to religious restrictions. Is it okay to substitute with turkey bacon/sausage?
Yes, of course – you may just need to adjust your macros as turkey bacon/sausage has a bit less fat and more protein typically.
This kind of sausage isn’t available in my country. Seems to be an American thing.
Any meat you could substitute the sausage with?
It’s typically ground pork + spices. If you google “breakfast sausage recipe” you’ll find plenty of different options where you can make your own 🙂
How does cheddar cheese have 5 carbs? My cheese says 0 carbs

Pre-shredded cheddar has some cornstarch added, and cheese in general will have some lactose. Both have carbs. Your cheddar says 0g carbs because anything under 0.8g carbs per serving can essentially be labeled as 0g carbs according to the FDA.
If you don’t like the look of it, don’t make it. Pretty simple to be honest.
You don’t have to be rude, I just asked a question. I buy cheese and grate it myself. And the omelette looks delicious to me, I was just questioning the carb count.
I wasn’t being rude, I was being realistic. You said ” it looks like an omelette to me” so I took that as you thinking it didn’t look good, so if that were the case I’d just recommend not making it. If you grate your own cheddar you’re likely looking at around 1/2 the carb count as listed.
