Who doesn’t love a good stir-fry? It’s a great cooking technique since it’s a convenient and fast way to whip up dishes. Plus, stir-frying retains more nutrients than other popular cooking techniques, like boiling.
Cook up this dish with fresh mushrooms, broccoli, and chicken, and feel free to use frozen broccoli and substitute the mushrooms for any type based on your preferences.
Broccoli is a popular superfood known for its high vitamin and mineral content. It’s also lower in calories but keeps you feeling fuller for longer due to being packed full of fiber and protein!
Chicken is known as a keto staple—and for a good reason! The keto diet is defined by a lower-carb way of eating, and chicken is a great, healthy protein option. It’s not only versatile and able to be incorporated in a variety of dishes from different cuisines, but it also tastes delicious with any combo of spices or seasonings!
This recipe calls for the use of boneless chicken thighs, as this meat is very juicy and tender. However, feel free to substitute it for any cut of chicken like drumsticks or chicken breast, depending on your preferences. The chicken skin also provides some extra fat.
Like chicken, mushrooms are highly versatile, able to absorb the flavors of whatever dish they are put into. While mushrooms are low in calories, they are a rich source of fiber, minerals, and antioxidants. In particular, mushrooms contain good amounts of B vitamins, which can help keep your skin, heart, and digestive system healthy. All mushrooms taste relatively similar, and all will work well in this stir-fry. Some good choices to consider include oyster and shiitake mushrooms.
Add in a punch of Eastern-inspired flavor with soy sauce, rice vinegar, and some freshly minced garlic. This dish is warming, hearty, and utterly delicious, making it a great dinner time option (it even keeps well as leftovers for lunch the next day!).
