When you begin a ketogenic diet, entertaining might be one of the worries you have. It’s not the easiest task to overcome when you have to serve people food they can enjoy and that you can also eat. A great finger food that you can make ahead of time is a stromboli. Stromboli is traditionally served rolled up like a roll cake, but in American cuisine, most pizza places will serve their stromboli folded up similarly to a calzone.
You can think of this as a very large savory danish that you can slice up and easily serve to people as an appetizer that they can pick through. Cut it up into small slices and let them take as they please. Alternatively, you can slice into 4 large pieces and serve as a meal with some roasted broccoli and butter or more traditionally Italian Style Green beans or pan fried asparagus.
Yields 4 servings of Ham & Cheese Stromboli
The Preparation
- 1 1/4 cups mozzarella cheese, shredded
- 4 tablespoons almond flour
- 3 tablespoons coconut flour
- 1 teaspoon italian seasoning
- salt and pepper, to taste
- 1 large egg
- 4 ounces ham, deli slices
- 3 1/2 ounces cheddar cheese, sliced
The Execution
1. Preheat your oven to 400°F and in a microwave or toaster oven, melt your mozzarella cheese. About 1 minute in the microwave, and 10 second intervals afterward, or about 10 minutes in an oven, stirring occasionally.
2. Combine almond and coconut flour, as well as your seasonings in a mixing bowl. I used salt, pepper and an Italian blend seasoning.
3. When the mozzarella is melted, place that into your flour mixture and begin working it in.
4. After about a minute, when the cheese has had a chance to cool down a bit, add in your egg and combine everything together. It helps to use two utensils here.
5. When everything is combined and you’ve got a moist dough, transfer it to a flat surface with some parchment paper.
6. Lay a second sheet of parchment paper over the dough ball and use a rolling pin or your hand to flatten it out.
7. Use a pizza cutter or knife to cut diagonal lines beginning from the edges of the dough to the center, leave a row of dough untouched about 4 inches wide.
8. Alternate laying ham and cheddar on that uncut stretch of dough.
9. Then lift one section of dough at a time and lay it over the top, covering your filling.
10. Then bake it for about 15-20 minutes until you see it has turned a golden brown color.
11. Slice it up and serve!

Going to make this with leftover chicken, bacon, and some swiss cheese.Yum.
Love this recipe. I have made it twice, first time as written. Second time by substituting buckwheat flour for almond flour in order to send it to a nut free school. I also added some avocado oil the second time, it made the dough more pliable and easy to form into a flat piece between the wax papers. I’m looking forward to making more of your recipes.

Tried this tonight. Absolutely fantastic. I haven’t been disappointed by your recipes yet! Thank you. It was just what I needed.
Yum! Made this for dinner this evening and the only complaint I have is that it was way too hard to stop myself from eating the whole thing! Thanks for the delicious recipe 🙂
Just wondering.. I’m going on a 4 day hike and if i were to put this some of this dish in a container, would it keep for a day or two?
I personally think it would be fine for 1-2 days, but others may be against that. I guess it’s really up to your own tolerance of food and what you feel you can get away with.
Thankyou 🙂 I made this and it is seriously the most delicious meal ever!!! Brilliant.
Glad that you liked it! Thanks so much!
Thanks for the recipe! Was super delicious and my non-Keto husband even loved it!
Really happy to hear you guys liked it!
Made this for dinner last night, it was absolutely delicious!
Really glad to hear that Dani!
Hi there, Craig… just subscribed to your site today (and downloaded your 30day plan a few minutes ago)… I’ve got a question for you, do you think it would work using cream cheese in the place of melted mozzarella? Maybe slightly softened for easier incorporation in the dough? what do you think?
oops, just realized this post is from last year… oh, well – maybe you’ll get notification of my comment still… 😉
Hey Sally! You wouldn’t be able to use just cream cheese, the dough would fall apart. The mozzarella, as it cools, allows for a pliable consistency so that you can shape it.
Hope that helps!
makes sense! I shall brave the hot mozzarella in the name of great food! 😉 THanks for the feedback…
Can I make this with cheddar? Just because it acts similar to mozzarella.
You could but the dough might be slightly harder to work with.
My wife made this for me and it is one of the BEST meals I have had on a diet in a LONG time… 10 out of 10 here! I am a huge fan of salty, cheesy and meaty! Thanks Craig.
Really happy to hear it Corey!
Craig, I was trying to make thing but my dough fell apart while I was folding its in..Any tips for next time?
Make sure that the cheese and flour mix together well after you microwave it.
Made this tonight and it turned out wonderfully!
Glad to hear it!
Just made this for today’s lunch – it was a bit sticky but I think that’s down to the coconut flour we get here in Italy, so I simply spread the ‘dough’ with a knife to cover everything, then cooked on both sides. LUSH! Next time I’m adding pineapple (sorry if I hear screams of pain at that thought lol).
Glad you liked it (and it ended up alright)! Just be careful with the carbs in the pineapple 🙂
Ah thanks Craig (oops spot the newbie lol). Right, will leave the pineapple out, but am now thinking ham and mushrooms in a garlic sauce mmm. I have to say, it was incredibly filling, had half for lunch and half for dinner and was really full! Next up – waffles!
Made this today, oh my gosh it was amazing, I didn’t have ham so I used BBQ pulled pork, mixed some cheese & sour cream together. Thanks for the recipe! 🙂
That sounds great!
I made this tonight and it turned out delicious! We are excited that we have some leftovers for lunch tomorrow. We served with some broccoli. Yum!
My goodness! This was so yummy, I made half of the dough and ate the whole thing, it can really be a real meal!
Oh my goodness! It’s pretty tempting 😀
Can you replace the coconut flower with more almond?
I want to add an additional cheese to the filling – how can I determine the total cards if I do that? I was thinking mozzarella. I also wanted to add a second type of meat – like sausage.
Check the nutrition label on your cheese if it’s packaged. If not try searching for it in the USDA database:

Mozz overload! I like it!
This was amazing loved the flavour, I used left of ham from a roast and switched out the coconut flour with almond. This is going to be a go to pasty for many other fillings. Thank you
Can you freeze or refrigerate this before baking and then bake when ready for guests? Or would you recommend cooking then freezing/refrigerate and just warm in the oven when ready for guests?
You should be able to refrigerate it no problem prior to cooking.
Hello, love the recipe. Can I prepare the dough a few hours in advance?
I loved this recipe. One I found out that I liked the flavor I bought a big bag of Mozz cheese and got started on meal prep. I made several of the ham and cheese, Philly cheese steak, and buffalo chicken. I put them in freezer, individually wrapped and take one out in the morning for the evening. Thay all taste amazing. Thank you so much for the recipe.
I may just be over looking it but on somerecipies i now it says the serving amount but not the serving size. Is there a place i can find just how much 1 serving is in meals like this?
It makes 4 servings but it’s really just a guideline. You can portion it out however you need to reach your macros (if that’s 1/3 or 1/5 or 1/2 of the stromboli, that’s fine).
