Preheat oven to 400F. Melt the mozzarella in a microwave or toaster oven. This will take about 1 minute in the microwave and 10-second intervals afterward, or about 10 minutes in the oven, stirring occasionally.
Combine the almond and coconut flours in
a bowl with Italian seasoning and salt and pepper.
Once the mozzarella is melted, add it to the flour mixture and begin working it in.
After about a minute, when the cheese has had a chance to cool down a bit, add in the egg and combine everything together. It helps to use two utensils here.
Once everything is combined and you've got a moist dough, transfer it to a flat surface lined with parchment paper.
Lay a second sheet of parchment paper over the dough ball and use a rolling pin or your hands to flatten it out.
Use a pizza cutter or knife to cut diagonal lines from the edges of the dough to the center, leave a row of dough untouched about 4" wide.
Add alternating layers of sliced ham and cheddar on top of the uncut stretch of dough.
Lift the sections of dough one at a time and fold them over to cover the filling.
Bake for about 15–20 minutes or until golden brown.
Slice up and serve!
