I know you’ve been asking for a mug cake that does not use almond flour, and I think you will find that this recipe really fits the bill! The cake is dense, but moist, and so easy to create.

In the directions, we tell you to mix the ingredients in a separate bowl. This is so that the ingredients are fully incorporated and you won’t hit any spots of dry cake mix while eating your mug. If you prefer to mix everything in the mug you can, of course, do that too!

If you don’t want to use butter, you can substitute melted coconut oil. You can also use regular powdered erythritol instead of Swerve if you wish. Erythritol can be purchased pre-ground or you can powder it yourself in a coffee or spice grinder.

Yields 2 servings of Coconut Flour Chocolate Keto Mug Cake

The Preparation

  • 2 tablespoons coconut flour
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons powdered stevia/erythritol blend
  • 1/4 teaspoon baking powder
  • 2 large egg
  • 2 tablespoons butter, melted
  • 2 tablespoons unsweetened almond milk

The Execution

1. In a bowl mix together the coconut flour, unsweetened cocoa powder, Swerve confectioners, and baking powder.

2. Add the two large eggs, melted butter, and almond milk to the dry ingredients. Mix together.

3. Add the cake batter to a greased coffee mug. You’ll need one that holds at least 12 ounces.

4. Cook the mug in the microwave for about 2 minutes. Cooking time may vary with your microwave. Usually, I know it’s done when the cake starts puffing up over the top of the mug.

5. Remove the finished cake from the mug and slice in half to serve.

    I just made this and it was awesome! I didn’t have a large enough mug so I just microwaved it in the bowl I mixed it in. It came out larger than I expected. It was nice and filling. I had it for breakfast with my coffee. Also I had no almond milk (time to go to grocery store) so I just used 1/2 & 1/2. I love how easy it is to remember this recipe. This will be my go to quick dessert recipe!

    Hi there, may i ask how did you get 2 g net carbs out of the coconut floor? Im a bit confused, im from eu, and if i look at my coconut floor, 2 tbsp has app. 7g of carbs, and the fiber is listed separately so that 7g is already my net carb, which means without calculating the rest of the ingredients its above 3.5 net carb at the end/ servings. Thank u in advance

    • I use the nutrition on the packaging and double check it with the USDA nutrition database typically. Different brands use different ingredients so it’s possible that that happened. It’s also possible that you are using an imported product with US-based nutrition information on the back?

  5. This may be a stupid question, as I don’t see it asked below. Does two servings mean two mugs worth?

    • Our serving sizes are always just guidelines based off of what we usually see people consume. You can consume the whole thing, but the recipe makes 1 mug worth. It’s just a lot of calories for most people to consume in 1 sitting.

  6. I love this, I make two little loaf cakes (tiny loaf tins) and bake in the oven, omg its just like choc cake. I also sub one tbs of coconut flour for almond flour, I think it makes it a little more moist as a cake.

    It is so delicious, light but with a rich chocolate flavor. Perfect dessert after a large meal or when you want a bullet proof coffee with a light but tasty cake. I didnt have almond milk and used water, it was just great. I made it a few times, and you can add a few nuts or chocolate chips, or spices and it is so good. Thanks!
