One of my favorite cheeses is baked brie. A while ago a friend had a party, and one of the appetizers was a baked brie wrapped in phyllo dough. It looked delicious, so I knew I had to make a keto version with cheesy dough.
For this recipe, I also added in some bacon bits and a few tablespoons of chopped, sauteed mushrooms, which took this baked brie to the next level. You don’t have to use both of those though; it would still be incredibly delicious with caramelized onions and pancetta, or sauteed zucchini slices and salami.
The great thing about this recipe is that it is incredibly easy and quick to make. From start to finish, it takes roughly 45 minutes and heats up really well the next day!
Yields 10 servings of Baked Brie with a Keto Crust
The Preparation
- 3/4 cup almond flour
- 1 teaspoon baking powder
- 2 cups mozzarella cheese, shredded
- 230 grams brie cheese
- 1/4 cup cremini mushrooms, chopped and sauteed
- 2 slices cooked bacon, Chopped
- 1 tablespoon butter, melted
The Execution
1. In a bowl, mix your almond flour and baking powder.
2. In a separate microwavable bowl, heat up your mozzarella cheese.
3. Mix your mozzarella and almond flour until it has the consistency of dough.
4. Quickly place the dough between two pieces of parchment paper and roll it into a circle using a rolling pin.
5. Place your brie cheese into the center of the dough.
6. Top the brie with the mushrooms and bacon. Using a knife, make a cut in the dough from the brie to the outside. Make similar cuts around the entire brick of cheese.
9. Take an individual piece of dough and bring it up onto the top of the brie/mushrooms/bacon. Continue wrapping the brie with the pieces of dough.
10. Once the entire brick of brie is covered, brush butter over the dough.
11. Bake on parchment paper at 350 for 30 minutes or until the dough has become a nice golden brown.
This makes a total of 10 servings of Baked Brie with a Keto Crust. Each serving comes out to be 216 calories, 17.7g fats, 1.6g net carbs, and 12.5g protein.

Baked Brie with a Keto Crust
Ingredients
- ¾ cup almond flour
- 1 teaspoon baking powder
- 2 cup mozzarella cheese shredded
- 230 gram brie cheese
- ¼ cup cremini mushrooms chopped and sauteed
- 2 slice cooked bacon Chopped
- 1 tablespoon butter melted
Instructions
- Preheat oven to 350F. In a bowl, mix the almond flour and baking powder.
- In a separate microwavable bowl, melt the mozzarella cheese.
- Mix the mozzarella and almond flour until it has the consistency of a dough.
- Quickly place the dough between two pieces of parchment paper and roll it into a circle using a rolling pin.
- Remove top parchment and place the brie cheese in the center of the dough.
- Top the brie with the mushrooms and bacon. Using a knife, make an angular cut in the dough from the brie to the outside. Make similar cuts around the entire brick of cheese.
- Take an individual piece of dough and bring it up onto the top of the brie/mushrooms/bacon. Continue wrapping the brie with the pieces of dough until fully covered.
- Once the entire brick of brie is covered, transfer parchment paper with brie to baking sheet and brush melted butter over the entire dough.
- Bake for 30 minutes or until the dough has become a nice golden brown.



















I did it this morning. Its unrealistic to mix melted morrezella and almond flour even if its immediately after putting it out of microwave. How could u mix it to get consistency of dough. Its all small flaps of dough after spreading on parchment paper. Nah not applicable recipe
Almost all keto dough recipes use mozzarella and almond flour. It’s an extremely common dough and very highly rated. I think you need to just melt the mozzarella more and work with it while it’s hot.
Could you use cream cheese?
Cream cheese would probably melt, so I don’t think it would be a good choice to use. I’ve heard from others that cheese like gouda would work.
Sonia, when I make it, I microwave for 45 seconds then stir the cheese, then continue in 15 second intervals until the cheese is soft and melted but not bubbling. Then I knead the flour into the cheese. It works perfect every time! My brie didn’t look quite as pretty as Craig’s, but it was delicious.

How would you eat this? Just in slices with a salad or something?
You can have it with a salad, soup, as a side with dinner, or as a full meal on its own (just increase the serving size if needed).
It’s really up to you and how it fits your preferences and goals.
I eat it just like it is, sliced in quarters. This dough is awesome, I use it for everything and prefer it to the Fathead pizza dough. Today I made some Jamaican Beef patties with it, adding 1.5tsp of turmeric and 1 tsp of chicken bouillon. They weren’t really flakey like real Jamaican patties, but it made for a decent keto alternative.
Made this tonight with a sous vide steak and green beans. It was a big hit! I think this will have to join my regular rotation. Thank you for this!!
