One of my favorite keto things to make is cheese based dough. It is incredibly versatile. These feta and bacon bites are just one of many things that you can make with this type of dough. Not only are these bites super easy to make, but cook time is roughly 15 minutes! They are also a great snack to keep for on-the-go.

For this recipe I used a muffin tin, however you don’t have too. You can put these on a cookie sheet (lined with parchment paper) or a silicon baking mat. I used a muffin tin so they would stay in place while baking or putting them in the oven. If you use a muffin tin then you will want to use liners so that your dough doesn’t stick to the tin.

Keep an eye on them once they are put into the oven. They do brown up in no time.

Yields 24 servings of Feta and Bacon Bites

The Preparation

  • 3/4 cup almond flour
  • 2 cups mozzarella cheese, shredded
  • 8 slices cooked bacon, chopped bite-sized
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup green onion, sliced
  • 3 tablespoons sriracha mayonnaise, such as Sarayo
  • salt and pepper, to taste

The Execution

1. Preheat your oven to 350°F

2. In a nonstick pan over medium heat, combine your almond flour and mozzarella. Stir constantly.

3. Your flour/cheese mix will form a dough like consistency after about 5 minutes.

4. Place your dough between two pieces of parchment paper. Roll flat with a rolling pin.

5. Use a cookie cutter or glass to cut out 24 circles. If you run out of dough then form the remaining bits into a ball. Heat it up on stove, then roll it out again.

6. Place the circles of dough into your muffin tin (or on a cookie sheet.)

7. Top with the bacon, feta, and onions.

8. Bake at 350°F for about 15 minutes, until the edges are browned. Cool, peel off the liners, and top with sriracha mayo!

Ingredients
  

  • ¾ cup almond flour
  • 2 cup mozzarella cheese shredded
  • 8 slice cooked bacon chopped bite-sized
  • ¼ cup feta cheese crumbled
  • ¼ cup green onion sliced
  • 3 tablespoon sriracha mayonnaise such as Sarayo
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 350F. Gather ingredients.
  • In a nonstick pan over medium heat, combine the almond flour and mozzarella, stirring constantly. The mixture should take on a dough-like consistency after about 5 minutes.
  • Place the dough between two pieces of parchment paper and roll flat with a rolling pin.
  • Use a cookie cutter or glass to cut out one circle per bite. If you run out of dough, form the remaining pieces into a ball, reheat it on stove, and roll it out again.
  • Place the circles of dough into a muffin pan using liners (or on a lined cookie sheet).
  • Top with the bacon, feta, and green onions.
  • Bake for about 15 minutes or until the edges are browned. Let cool, peel off the liners and top with Sriracha mayo. (Or you can make your own by mixing Sriracha and mayo.) Season to taste and enjoy!
