In a nonstick pan over medium heat, combine the almond flour and mozzarella, stirring constantly. The mixture should take on a dough-like consistency after about 5 minutes.
Place the dough between two pieces of parchment paper and roll flat with a rolling pin.
Use a cookie cutter or glass to cut out one circle per bite. If you run out of dough, form the remaining pieces into a ball, reheat it on stove, and roll it out again.
Place the circles of dough into a muffin pan using liners (or on a lined cookie sheet).
Top with the bacon, feta, and green onions.
Bake for about 15 minutes or until the edges are browned. Let cool, peel off the liners and top with Sriracha mayo. (Or you can make your own by mixing Sriracha and mayo.) Season to taste and enjoy!
