We went out for lunch recently and had a salad that came with a raspberry vinaigrette. Of course knowing it would be laden with sugar, I made sure I got it on the side to confirm my suspicions. When the salad came to the table, I dipped my finger in the dressing to give it a taste – and not surprisingly found it ridiculously sweet. The flavor, though, was amazing.
Once we got home, we knew exactly what we needed to do. Recreate this vinaigrette without the carbs and sugar – so we could use it on our own salads and impart that fantastic flavor. This will mix extremely well if you have any sort of bitters in your salads – arugula, kale, or radicchio work very well with it.
My suggestion is to store this keto friendly salad dressing in a mason jar in your fridge to keep for a few weeks. If your vinaigrette separates (the oil sometimes comes apart from the liquids), simply give the jar a few shakes before using it. The shaking process helps emulsify the oil and liquids together again so that you can use it as a vinaigrette.
Yields 1 ½cups of 5 Minute Keto Raspberry Vinaigrette
The Preparation
- 1/2 cup white wine vinegar
- 1/2 cup olive oil
- 35 drops liquid stevia
- 1/2 cup raspberries
The Execution
1. Combine vinegar, olive oil, and liquid stevia in a container that can fit an immersion blender.
2. Add raspberries to the container and blend well using an immersion blender.
3. Strain seeds out from the vinaigrette. Save the dressing but discard the seeds.
4. Enjoy and pour over your favorite salads!
This makes a total of 1 serving of 5-Minute Keto Raspberry Vinaigrette. The serving comes out to be 1002 calories, 108.4g fats, 3.4g net carbs, and 0.7g protein.
