Fresh raspberries, crunchy pecans, and salty feta cheese are what makes this salad one of the best I’ve had.
For this recipe, I used a mix of lettuce called field greens, which are made up of several different kinds of baby greens. Usually, you can find them in the store, either bagged or boxed. However, if you can’t find it you can always use a mix of romaine, baby spinach, kale, and arugula.
The dressing for this salad is a mix of olive oil, apple cider vinegar, and lemon juice. This works really well with the feta cheese and pecans.
Yields 8 servings of Raspberry Pecan Salad
The Preparation
- 170 grams field greens
- 200 grams diced feta cheese
- 150 grams pecan halves
- 200 grams raspberries
- 3 tablespoons olive oil
- 5 tablespoons apple cider vinegar
- 1 tablespoon lemon juice

1. In a salad bowl mix together the lettuce, feta, pecans, and raspberries.
2. In a separate bowl whisk together the olive oil, apple cider vinegar, and lemon juice.
