It’s time to get comfy and cozy with a delicious bowl of cheese and broccoli soup! This keto recipe is pretty easy to prep and execute. It is a great meal to make quickly before relaxing by the fire during fall or wintertime, or as an appetizer before dinner.

If you want to spice things up a little bit, you could add in some jalapeno peppers or pepper jack cheese.

Yields 4 servings of Broccoli and Cheese Soup

The Preparation

  • 1 tablespoon butter
  • 3/4 medium onion, diced
  • 2 teaspoons fresh garlic, minced
  • salt and pepper, to taste
  • 1/4 teaspoon xanthan gum
  • 1/2 cup chicken broth
  • 1 cup broccoli, chopped
  • 1 cup heavy cream
  • 1 1/2 cups cheddar cheese, shredded

The Execution

1. Pre-heat the pot on the stove. In the pot, place the onions, minced garlic, salt, and pepper. Sauté on medium until the onions are clear.

2. Sprinkle xanthan gum over the butter and onions. Stir in the chicken broth.

3. Put the broccoli in the pot. Ensure the vegetables are coated with broth mixture.

4. Quickly stir in the cream. Stir frequently so the xanthan gum mixes in and thickens. Stir frequently to add soup to a boil.

5. Slowly begin whisking the cheese into the pot.

  • Once simmering, slowly begin whisking the cheese into the pot. If preferred, add additional chicken broth to achieve desired consistency.

    Holy cow this was amazing! I almost ate the whole batch but managed to convince myself to save some for lunch tomorrow. Mine was a littl thick, so I added an extra half cup of chicken broth and added a teaspoon of cumin for a boost of flavor. This will definitely be a staple meal in my kitchen every week and I will double the batch next time!

  3. I have a chicken/egg allergy (makes keto really creative!) – can I substitute the chicken broth for veggie or beef?

    Tried the recipe today. It was easy to make and very delicious. Instead of 1 cup heavy cream I used 2/3 cup soy milk and 1/3 cup olive oil and no xanthan gum. Added 1 cup of water. Thanks for the beautiful recipes 🙂
