If you don’t have access to grouper, any white fish will work just fine, too!

Yields 2 servings of Pan Seared Grouper with Roasted Green Beans

The Preparation

Seared Grouper:

  • 12 ounces grouper filet
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1/2 medium lemon, cut in wedges to serve

Roasted Green Beans:

  • 8 ounces green beans, washed and trimmed
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • salt and pepper
  • 4 tablespoons parmesan cheese, shredded

The Execution

1. Gather and prep all of your ingredients. Pre-heat oven to 400F.

2. In a bowl or ziploc bag, combine the green beans, oil, garlic powder, and salt and pepper to taste. Mix together (or shake the bag) well, until green beans are evenly coated.

3. Lay green beans on a baking sheet or inside of a casserole dish. Roast for 10 minutes or until starting to wrinkle.

4. Remove from the oven and sprinkle the parmesan cheese over the top of the green beans, then roast for an additional 10 minutes.

5. Once the green beans go back in, season the grouper with garlic powder, paprika, and salt and pepper to taste.

6. Place a pan over medium heat and add olive oil. Once hot, sear the fish on both sides until cooked through, about 2-4 minutes per side depending on thickness.
