Loco moco is a favorite quick meal option in Hawaii. it’s typically served with rice, fried egg, and smothered in gravy. We all know that burger is a keto staple, but this delightful recipe is a fun twist that will surely be a regular in your meal rotation!
This recipe shows you how to make the patties and gravy. It’s up to you to dress up with cauliflower rice, and the requisite fried egg.
Yields 8 servings of Keto Loco Moco.
The Preparation
Loco Moco Patties:
- 24 ounces ground beef
- 1/3 cup pork rinds, crushed
- 1/2 teaspoon ground nutmeg
- 1 teaspoon onion powder
- salt and pepper, To taste
- 1 large egg
- 2 tablespoons heavy whipping cream
- 3 tablespoons coconut oil
Mushroom Gravy:
- 1 cup beef broth
- 1 teaspoon worcestershire sauce
- 1 teaspoon soy sauce
- 1 tablespoon salted butter
- 1 small shallot, diced
- 100 grams oyster mushrooms
- salt and pepper, to taste
- 1/2 teaspoon xanthan gum
The Execution
Loco Moco Patties
1. In a large bowl, add the beef, pork rinds, nutmeg, onion powder, salt, and pepper.
2. In a separate bowl, combine heavy whipping eggs and cream. Whisk together until the egg batter is a uniform color.
3. Add the egg mixture to the ground beef.
4. Mix well, the beef mixture will feel a bit stick.
5. Divide into 8 portions.
6. Make patties by tossing each portion from one hand to the other. This method releases trapped air. Shape into oval patties with a slight round mounded top. Repeat until you have 8 patties. Refrigerate for at least 30 minutes.
7. Heat coconut oil over medium heat. Place patties. Indent the center of each patty. This allows for shrinkage during cooking.
8. Turn over when browned.
9. Cover the skillet with a lid, then cook for several more minutes to ensure that the patties are cooked through.
Mushrooms Gravy
1. Whisk together the stock, Worcestershire Sauce, soy sauce, salt, and pepper in a cup.
2. Heat butter until melted. Sauté shallots and mushrooms until soft.
3. Add the liquid contents of the cup to the pan.
4. Continue cooking until the sauce is somewhat reduced.
5. Sprinkle xanthan gum over the top, then whisk into the sauce to thicken into a gravy. To serve, spoon gravy over patties and top with fried egg.

- Heat coconut oil in a skillet over medium heat. Place patties in the skillet and indent the center of each patty a couple of times. This allows for shrinkage during cooking.
- Turn over when first side is browned.
- Cover the skillet with a lid, then cook for several more minutes to ensure that the patties are cooked through.
- Whisk together the stock, Worcestershire sauce, and soy sauce in a cup.
- Heat butter in skillet until melted. Sauté shallots and mushrooms until soft.
- Add the liquid contents of the cup to the pan. Continue cooking until the sauce is somewhat reduced. Taste and season with salt and pepper if needed.
