Coconut Orange Creamsicle Fat Bombs

Lately I’ve been getting a lot of requests to do simpler and easier recipes. Keto definitely has a lot of staple foods for me, but usually I try to post more extravagant recipes on the site. So, I think bringing some quick and easy recipes out will really help people that are just starting out, or trying to find new recipes for simple things. Fat bombs are pretty great for a quick and simple dessert or a snack midday. They’re packed full of fats and are perfect for a ketogenic diet.

Orange Creamsicle’s are something I grew up with as a kid. But, since I went keto, I hadn’t really had much of a chance to really taste one in a while. Mio had gone on sale last week and we decided to pick some up to see what other applications they had besides adding it to water. We tasted the Orange Vanilla flavor and knew right away what we were going to make: fat bombs.

If you don’t have any accessibility to Mio, you can always use a mixture of 1/2 tsp. Orange Extract, 1/4 tsp. Vanilla Extract, and liquid stevia to taste. Mio is already partially sweetened using sucralose, but I felt like a few drops of stevia really took the sweetness to a better level.

Yields 10 Coconut Orange Creamsicle Fat Bombs

The Preparation

  • 1/2 cup coconut oil
  • 1/2 cup heavy whipping cream
  • 4 ounces cream cheese
  • 1 teaspoon orange vanilla mio
  • 10 drops liquid stevia

The Execution

1. Measure out coconut oil, heavy cream, and cream cheese.

2. Use an immersion blender to blend together all of the ingredients. If you’re having a hard time blending the ingredients, you can microwave them for 30 seconds to 1 minute to soften them up.

3. Add Orange Vanilla Mio and liquid stevia into the mixture, and mix together with a spoon.

4. Spread the mixture into a silicone tray (Mine is an awesome Avenger’s Ice Cube Tray) and freeze for 2-3 hours.

5. Once hardened, remove from the silicone tray and store in the freezer. Enjoy!

  • Once hardened, remove from the silicone tray and store in the freezer. Enjoy!

  3. I do a version of this with orange sugar free jello. Dissolve with two cups of boiling water, then add a cup of sour cream and a cup of whipping cream. divide and put in the fridge. Turns into jello consistency with the taste of a creamsicle! 🙂

    Hi Craig, so glad to have found your website. I’m day 4 Keto. I was interested in making these Orange Vanilla fat bombs and was looking over your nutrition breakdown. You list that a 1/2 cup of heavy whipping cream has 3 grams of carbs. My container at home notes 1 gram carbs/1tablespoon. Given there is more than 3 tbl in a half cup, is the difference in brands of heavy whipping cream? (ps; I like your numbers better 😉 )

    • There may be, though sometimes brands round up, some round down. It’s a strange rule with the USDA. I’d suggest going with an organic brand, like Organic Valley 🙂

        One other question: On a nutrition label, does total carbs include any sugars listed below fiber? I trying to figure out if I only focus on total carbs – fiber = net carbs. (ignore the sugar number?)

        • As long as you’re in the US then it’s just total carbs – fiber. The sugars/fiber any anything else listed under total carbs are included in the total carb count on all US nutrition labels.

  6. What is estimated volume in each ice cube tray pocket? I think I bought the same trays but I have a ton left over after filling them.

    • I’m not sure what the exact volume was per pocket on these as it was variable per each mold. You shouldn’t have a problem though, you could make extras and just divide the macros out by the total calorie/fat/carb/protein counts.

    I want to make this, but I can’t use liquid stevia. Do you think Swerve would work as a replacement? Though I don’t know how much I should use…

  13. I don’t have any kind of immersion blender. Do you think this would turn out OK if mixed by hand? Also, liquid sucralose instead of stevia wouldn’t make a difference right? Thank you

  14. You could also use a little bit of sugar free orange Jello mix instead of stevia to sweeten it up and give it a little extra orange colouring.

  18. recommendations other than Mio? Ive read the ingredients in Mio, and I’m a little grossed out.
