Creamy Delicious Keto Friendly Eggnog

Growing up I never really liked eggnog. That slimy, thick consistency was never something that I wanted to like or could bring myself to like.

This keto eggnog recipe, however, will be a hit – it’s thick, creamy, delicious, and will knock your socks off! If you’re new to keto and haven’t had alcohol – be careful as this can make you drunk. I put a lot of alcohol in mine as we have a family that can drink often.

Yields 5 servings of Creamy & Delicious Keto Eggnog

The Preparation

  • 2 cups heavy whipping cream
  • 1 cup unsweetened carton coconut milk
  • 4 large egg
  • 1 tablespoon vanilla extract
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground allspice
  • 4 tablespoons stevia/erythritol blend, such as Swerve
  • 7 1/2 ounces clear rum

The Execution

1. Assemble the ingredients.

2. Add the heavy cream and coconut milk to a mixing bowl.

3. Separate the egg whites and yolks of 3/4 of the eggs into two different bowls, reserving one-quarter of the whole eggs for later.

4. Whip the egg whites until soft peaks form. Whisk the egg yolks until creamy.

5. Mix the egg whites into the cream and coconut milk mixture.

6. Add the vanilla to the mixture.

7. Add the spices and sweetener to the mixture. Mix the ingredients together well, ensuring that there are no lumps in the mixture.

8. Whisk the remaining egg until consistent throughout (no whites showing). Mix this into the eggnog.

9. Now for the rum! Pour it into the eggnog and mix well. Enjoy!

  1. Hi, I was wondering when you added the 3 yolks that were whisked in step 5?

    • Hey Kyla,

      You add them in, in between Step 5 and 6. You add them to the coconut milk before you add the egg whites in. I’ve updated the post to include that step – sorry for the confusion!

    • Hi Maria, the size of the servings are going to depend greatly on the volume of rum used. You could reduce the amount of rum added, or even split the recipe up into smaller servings if needed.

        I didn’t realize there were so many grams of protein and carbs.
        Guess i learned something new today.

        • It’s not very much protein or carbs when you think of the amount of volume this is creating. Heavy cream is very rich and calorie-dense, and we’re using 2 cups of it in this recipe. I remember when I made this recipe how rich it was – you wouldn’t be able to have servings upon servings of this. However, you could add more coconut milk to reduce the calorie content (and to “water” it down a little bit).
