I’ve seen this idea floating around the web for a while. It combines the amazing taste of a corndog with a super easy way of creating a bite-sized treat. You can have these done in 20 minutes or less and ready to send out of the kitchen as an appetizer for a party.
I thought with the Super Bowl coming up, these would be a perfect way to serve finger-food while still keeping it low carb. All of your guests will love them and easily be able to eat/dip them into whatever they’d like. Speaking of which, a Bacon and Roasted Garlic Spinach Dip would go awesome with these. They’re also something that your kids will absolutely love too, so you may need to make extra!
My suggestion is to let these cool completely before serving. About 20 minutes after they are out of the oven, they taste great. When you eat them hot, they can have a slightly strange texture from the psyllium husk – but once they have been sitting out they absorb the fats and gain a lot better texture.
Note: If you don’t like sweetness as much as most people, then use 1 or 2 tbsp. Swerve in this. The sweetener does give an awesome taste that you’d find in regular cornbread, so you shouldn’t skip it.
Yields 20 Corndog Muffins
The Preparation
- 1/2 cup almond flour
- 1/2 cup flaxseed meal
- 1 tablespoon psyllium husk powder
- 3 tablespoons stevia/erythritol blend, such as Swerve
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1 large egg
- 1/3 cup sour cream
- 1/4 cup butter, melted
- 1/4 cup unsweetened carton coconut milk
- 100 grams lit'l smokies, or hot dogs cut into smaller pieces
The Execution
1. Pre-heat oven to 375F. Mix together all of the dry ingredients in a bowl. Make sure all of the ingredients are well distributed.
2. Add your egg, sour cream, and butter and then mix well.
3. Once mixed, add the coconut milk and continue to mix.
4. Divide the batter up between 20 well-greased mini-muffin slots, then cut the Lit’l Smokies in half and stick them in the middle – it doesn’t get simpler. You can get a mini muffin tray on amazon.
5. Bake for 12 minutes and then broil for 1-2 minutes until the tops are lightly browned. Feel free to use a fork or your fingers to push the pieces of hot dog back into the muffin if they rise with the batter.
6. Let the muffins cool for a few minutes in the tray, then remove and let cool on a wire rack.
7. Serve up with some spring onion (optional). You can also mix together mayonnaise, ketchup, and chili paste to make a sweet and spicy dipping sauce!
This makes a total of 20 servings of Keto Corndog Muffins. Each serving comes out to be 82 calories, 7.3g fats, 0.8g net carbs, and 2.1g protein.

Keto Corndog Muffins
Ingredients
- ½ cup almond flour

You could try but I don’t usually use coconut flour too much so I don’t want to give you a wrong answer. You could always use sunflower seed flour to sub in, though.
Sadly, the only way I know to get that cornbread texture is to add arrowroot flour–oh, the CARBS in that stuff! That’s okay–I’ll make up for the weird texture by adding sweet corn flavoring. If I can’t win ’em over with the TASTE, then they can just go dip their Smokies in a jar of salsa!
Hehe. These definitely had a slightly different texture than traditional cornbread, but I thought they came pretty close (especially after resting for about 20 minutes). The sweetness is what made it though.

I love these muffins! They came out perfect. I made some modifications. I did not have mini muffin pans so I made 10 regular sized muffins and cut the hot dogs up into smaller pieces and mix them in. I missed having corn dogs.
Glad you liked it Sam! Regular sized muffins sounds good too – especially if you used a thick sausage in the middle like Bratwurst 🙂
What kind of sauce is in the picture? I didn’t see any in your condiment section that look like that.
It’s just a simple ketchup/mayo/sriracha mixture (fry sauce, using sriracha instead of mustard). I mention it on the last picture 🙂
Sadly while they were tasty mine did not come out looking like yours and they were not very muffin-like. They were squishier than that. Is there a particular brand of flax meal that you use? Any other recommendations?

Did you use the psyllium that the recipe calls for? Typically if they are not forming up like they should (when using flax and psyllium), you can let the dough sit for a while and then mix it again and let it sit. It takes some extra time with different brands for the liquids to be absorbed fully by the flax and psyllium.

I’m amazed how much these taste like corndogs! I used a regular size muffin pan, chopped the hotdogs in smaller pieces so I get a hot dog in every bite, and baked them for a few more minutes. SO GOOD!

Can I fry them like a corn dog?
Do you use the canned coconut milk, or boxed coconut milk for this recipe? Is it unsweetened?
I always use coconut milk from the carton (so delicious brand, unsweetened) unless I specify it from the can. Generally canned coconut milk is pretty carby.
is there an alternative to flax seed? i really want to try these but flaxseed gives me an upset stomach
You can generally replace flax with chia seeds in 2/3 the amount of flax.
Is there a replacement for Swerve?
Yes, a blend of erythritol will work. You can add a few drops of liquid stevia as well if you want it more sweet.
Has anyone had luck with making these with out the egg? I have a child who can’t do eggs.

I finally got around to making these. Happy to report that, even though I was doubtful of how they would come out, they were totally delicious and fulfilled that “corn dog” craving. Another plus is that you can save them in the fridge for up to several days and reheat a few batches at a time in the oven for snacks. They are even better reheated!

Can you use something other than psyllium husk powder?
For this recipe, the psyllium soaks up liquid and changes the texture. I’d recommend trying the psyllium for this one.
Wow, these turned out amazingly delicious. I followed the recipe exactly and used chicken sausage. Taste and texture, spot on. Reheated, the muffin part crisped slightly and tasted even better to me! The muffin part is so yummy I am thinking of making another batch with double the swerve and adding fresh raspberries ( no meat, obviously). Thank you for sharing this recipe!

Would heavy cream or almond milk be an okay substitute for coconut milk?
Almond milk alone would work. This is coconut milk from the carton used in the recipe so it’s a similar consistency to almond milk.
I LOVED These! I did not put any sweetness, and they were still good! They did taste like corndogs, mostly because of the texture. My family loved them too! Super with mustard!
Would these freeze ok?
I’ve frozen similar dishes with success so I think these would freeze up just fine also!
Can you subsitute hempseeds for the flaxseed meal?
I haven’t found that hemp seeds soak up liquids like flaxseed meal does. Because of this, I don’t think it’d work as a good substitute in this recipe.

Not really for this recipe, they give unique textures. Flaxseed can generally be substituted with 2/3 the amount of ground chia seeds, but I haven’t found a good replacement for psyllium husk.

Yes, you could use a 12-cup muffin pan, but you may need to cook a bit longer (I’d also recommend adding a bit more hotdog to each one so that the dough to hotdog ratio is enough). You could use heavy cream instead of the carton coconut milk but it will add some additional calories to the recipe.
These could potentially be breakfast muffins with link sausage instead of the hot dog, and adding maple extract and more sweetener to the muffin batter! Fantastic!
