Raspberry Brie Grilled Waffles

I’ve always been a fan of grilled cheese sandwiches, and this takes the cake for being one of the best I’ve had. These are decadent enough to be served as a full blown main course, or just to impress someone significant in your life for breakfast. No matter what course you serve it as, your guest will be super impressed with what you were able to accomplish. This is a common rarity among foodies, and is always enjoyed by everyone I serve them to.

You can use other fruits in this if you’re not a huge raspberry fan, but raspberries tend to pair extremely well with brie. You’re looking for something bright and slightly acidic that can cut through the richness of the double-cream brie. So, feel free to use blueberries or blackberries in place of them. Just make sure that if you do end up changing the fruit, you watch the carb counts on them as these are relatively high already.

A little trick I found out about when making waffles (if you don’t have an indicator on your waffle maker) is to watch your steam levels. When a waffle is cooked, very little steam will be coming out of the waffle iron. So, if you have an indicator that usually goes off too soon, just keep an eye on the steam that’s coming out. If there’s still a lot, it’s definitely not ready yet – we all hate it when we lift the waffle iron to see if it’s done and everything just rips apart.

P.S. This waffle mixture will create awesome waffles in and of itself. So if you have a waffle hankering that needs to be fulfilled, feel free to just use the waffle recipe!

Yields 2 servings of Raspberry Brie Grilled Waffles

The Preparation

Waffles:

  • 1/2 cup almond flour
  • 2 tablespoons flaxseed meal
  • 1/3 cup unsweetened carton coconut milk
  • 2 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 2 tablespoons stevia/erythritol blend, such as Swerve
  • 7 drops liquid stevia

Filling:

  • 3 ounces brie cheese, double cream
  • 2 tablespoons butter
  • 1 tablespoon stevia/erythritol blend, such as Swerve
  • 1/2 cup raspberries
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest

The Execution

1. Mix together all of the ingredients for the waffles in a container. Make sure that the consistency is smooth and there are no lumps.

2. Heat a waffle maker (I use this waffle maker) and once hot, add your batter. Allow it to cook until the light turns green or the steam levels are low.

3. Take the waffles out and allow them to cool slightly.

4. Slice your brie and lay on top of the waffles while still warm so that the brie comes to room temperature.

5. In a pan on the stove, heat butter and swerve. You can powder the swerve in a spice grinder.

6. Once the butter is starting to brown and the swerve is dissolving, add your raspberries, lemon juice, and zest of 1/2 lemon.

7. Continue to stir the mixture until it bubbles and becomes jam-like.

8. Under the broiler, broil the brie until melted and the waffle slightly crisp.

9. Assemble the waffle together with the raspberry filling and the brie. Put into a pan and “grill” for 1-2 minutes per side.

  • Remove the waffles and let cool slightly.
  • Slice the brie and lay it on top of the waffles while still warm to help bring the brie to room temperature.
  • In a pan on the stove, heat up the butter and sweetener. Optional: Use a spice grinder to powder the sweetener for better texture.
  • Once the butter is beginning to brown and the sweetener is dissolving, add in the raspberries, lemon juice, and lemon zest.
  • Continue to stir the mixture until bubbling and jamlike in consistency.
  • Broil the waffles until they're slightly crisp and the brie has melted.
  • Assemble the waffles with the raspberry filling and brie. Place in a pan and toast for 1–2 minutes per side.
  • Enjoy!

My waffles always stuck to the waffle maker because I never knew when to take them out and it was such a frustrating experience. I tried your waffles with your tips about the steam level and I got perfect waffles for the first time! Yay!! Thanks!

    Couple of questions – what coconut milk do you use – the phrase “coconut milk” means many things to many people – from the water in a coconut through to dairy substitutes. Also what is a “broiler” – it’s a sort of chicken in the UK 😉

    • Ah, sorry about that. I always use coconut milk from the carton (unsweetened). You can check the macros on them to compare in the macro list. If I use coconut milk from the can, I usually specify.

  8. Made these this morning. The Brie I originally got was too ripe (ripe raw milk Brie = funky!) so we got a young Camembert instead, which was definitely a smart move. If you’re in Europe/using raw milk cheeses, aim for very young/unripe ones. Next time I think I’ll cut down on the butter in the raspberry jam as it separated out. We have a round waffle iron, and this made two “big” round waffles (fyi for anyone who has a round rather than square/rectangular waffle maker). We preheated the oven to 220C fan, melted the cheese on the waffles at that temperature (~5min), then added the jam, topped with the other halves of the waffles, and popped back in the hot oven for another 5-7min until just starting to brown. This was easier than heating up the broiler, then getting another pan dirty, and they came out perfect. For the record, this is THE best-tasting waffle recipe we’ve tried to date! My partner couldn’t stop picking at the corners while I was cooking the jam. They’d be perfect with a little powdered sweetener just on their own. Thanks for the fantastic recipe! Next week we’ll be making a “ham and cheese” version with a little mustard mayo. The possibilities really are endless. 🙂

  9. This was amazing. I didn’t have brie so I used fresh mozzarella and I didn’t have raspberries so I subbed blackberries. I also did not have any Swerve so I subbed erythritol and it seemed fine (I did not powder it for the jam and it wasn’t gritty or anything). The recipe was way better than I expected, it didn’t taste ‘special diet’ at all. BTW, to any readers, the waffles are fab on their own, too.

    Can you use just powder stevia (I only have truvia) instead of this swerve stuff? Just curious, if I could omit it in general I would – maybe I can do that for the filling?
