I had years of stomach issues a friend at work said she did too and Keto solved the issues…I rolled my eyes only to go to my gastrologist the following Monday to hear her say Sue I want you to try Keto. The rest is history.

1. What tactics did you employ to help you get to your goal?

The first thing I did when I started was to take several trash bags and empty my pantry and freezer of any processed foods. My next tactic was to figure out my weaknesses and look at substitutions. I went to the site and printed off recipes that would satisfy my weakness and made sure to have the key ingredients on hand.

What did I find helped me get to my goals best? Feeling great kept me goal-oriented my goal was never to lose weight it was just a really good side effect. My main goal was to get off stomach medication so not having stomach pain kept me on track and the weight loss was a nice extra incentive.

2. What is the most impactful change you’ve made to your diet and why do you feel it’s been the most important?

Instead of grabbing quick unhealthy food I now enjoy good filling foods and find I only eat when I’m hungry before it was more comfort, boredom or it’s time to eat (breakfast, lunch, dinner) now I spend time thinking what can I make or create next to enjoy.

3. What is the best single piece of advice you can give to someone that is just starting out?

STICK with it…it works!! The scale may NOT always show you the big picture of how you feel will.

4. How do you feel your life is now that you’re at your goal?

I’m so incredibly HAPPY I’ve never been a size 4/6 in my life. I’ve always had dreams to be this size and they are what I considered a DREAM. I would never in a million years be that small, but Keto is letting me live my dream!

5. What do you consider the biggest change in your day-to-day life?

I spend so much more time preparing and creating meals and less time being a couch potato. When I’m not cooking I’m out walking and enjoying my new found life.

6. What did you do to find support throughout your journey?

My goals and dreams caught on quick to those around me so not only was I a Keto cheerleader, but I created my own support system by those who joined me. When I’m out and about and I see someone starting out I have to stop to share my knowledge and success.

If I help a few people stick to it, I’ve been successful. Most think cutting the carbs and sugars is impossible…they think all you can eat is salad until they hear what I eat. I’ve found so many success stories online it’s amazing. I love to try new things and this makes the journey so much more fun.

7. What do you currently do to manage your day-to-day diet?

I’ve always been a cook so this is the easiest thing I’ve done in my life. I spend my Sunday planning what I will make for the week and shopping to ensure I have everything. I also do a lot of online searching to keep things new and exciting. I’ve been encouraged to have my own food truck or catering which I am still thinking about but for now, I will cook for my friends and to share with those who just want to see and try.

8. What is your favorite keto recipe from www.ruled.me that’s become a staple?

There are so many hard to choose but my all-time favorite would have to be Beanless Low Carb Chili Con Carne one of my favorite things to do with it is make nachos or a nacho/chili salad. I make up the meat veggie mix in large quantities then seal it in small packages just pulling it out to add spices and tomatoes so when in a jam it’s quick.

Yes, I said nachos I make chips out of Joseph’s low carb pitas but cutting them into chips brushing with olive oil added Himalayan salt and bake…the possibilities are endless. Even a hotdog chili casserole was good during baseball season….Go Astros!

9. If there is one thing that you could do differently during your journey, what would it be and why?

I would change nothing. I feel it went very smooth and now I am very settled in with my new lifestyle. I just wished I would have known the Keto lifestyle 25 years ago!
