Happy St. Patty’s day everybody! I think I’ll be staying pretty classic this time and make some Corned Beef and Cabbage tonight, but we’ll see what happens to give it a twist.
So, you rarely see me using avocado and there’s a reason for it – I just don’t like the stuff. The greens we’re getting today is from spinach. Spinach is seriously one of my favorite vegetables. It’s packed full of micronutrients and it takes on flavors of other things really well. You’re probably thinking to yourself “hmm, spinach…coffee…butter…pumpkin?” TRUST ME HERE!
The spinach takes on the flavors of the spices really well, you can’t even taste the greens. If it comes through at all, it’s a bare hint of bitterness that compliments everything very well anyway. It kind of tastes like a herbal chai latte, with alcohol and creaminess. Go figure, right? It’s absolutely delicious, and I really recommend this one for St. Patty’s! Even for the non-ketoers out there, you can definitely market this as a “healthy” drink!
Okay, I know this says the alcohol is optional, but who are we kidding? It’s St. Patty’s day – live it up a little! I was going to say add as much or as little as you want, but don’t take that advice. Don’t add as little as you want, the more the merrier 🙂
Yields 2 Servings of Spinach Shamrock Latte
The Preparation
- 1 cup brewed coffee, strong
- 3/4 cup unsweetened carton coconut milk
- 1/2 cup pumpkin puree, such as Libby's
- 90 grams spinach
- 2 tablespoons butter
- 2 tablespoons erythritol
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon cardamom
- 1/4 teaspoon ground allspice
- 10 drops liquid stevia
- 10 large ice cubes
- 1/4 cup scotch, optional (you can also use whiskey or bourbon)
The Execution
1. Add all the ingredients to a blender. I’m using a Ninja Blender (they’re pretty awesome). Optional: Add 1/4 Cup Whisky, Bourbon, or Scotch.
2. Blend all ingredients well until combined.
3. Optional: Add whipped cream and cinnamon. Serve cold!
This makes a total of 2 servings of Spinach Shamrock Latte. Each serving comes out to be 216 calories, 13.4g fats, 4.5g net carbs, and 2.4g protein.

Spinach Shamrock Latte
Ingredients
- 1 cup brewed coffee strong
- ¾ cup unsweetened carton coconut milk
- ½ cup pumpkin puree such as Libby's
- 90 gram spinach
- 2 tablespoon butter
- 2 tablespoon erythritol
- ½ teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground ginger
- ¼ teaspoon cardamom
- ¼ teaspoon ground allspice
- 10 drop liquid stevia
- 10 large ice cubes
- ¼ cup scotch optional (you can also use whiskey or bourbon)
Instructions
- Add all of the ingredients to a blender.
- Blend until well combined.
- Serve cold!
