Channel your inner Rachael Ray and whip up this weeknight meal in 30 minutes or less. I think the method for cooking this chicken is wonderful. The pieces are coated in Parmesan then fried in the sun-dried tomato oil. This creates a flavorful sear on the chicken itself.
Then these chicken thighs are smothered in a creamy sun-dried tomato sauce and Parmesan cheese, taking this meal to the next level. This recipe is perfect with zoodles or a side salad.
Yields 6 servings of Keto Creamy Sun-Dried Tomato Chicken Thighs
The Preparation
Chicken:
- 1/2 cup parmesan cheese, grated
- 21 ounces boneless, skinless chicken thighs
- salt and pepper, to taste
Sauce:
- 1/4 cup olive oil
- 1 cup sun-dried tomatoes, chopped
- 4 teaspoons fresh garlic, minced
- 1 tablespoon italian seasoning
- 1 1/2 cups heavy cream
- 1/4 cup parmesan cheese, grated
The Execution
1. Add the Parmesan cheese for the chicken, salt, and some pepper to a plate. Dip the chicken in the mixture to coat it.
2. Preheat the sun-dried tomato oil in a large skillet over medium-high heat. Sear the cheese coated chicken for several minutes on each side, so that the chicken is browned. Set the chicken aside while you make the sauce.
3. Add the sun-dried tomatoes, garlic, and Italian seasoning. Cook for a few minutes until the tomatoes start to soften.
4. Add the heavy cream, and sprinkle in the remaining Parmesan cheese. Whisk together to create the finished sauce.
5. Add the chicken back to the skillet and continue cooking until the chicken is cooked completely through.

Yes I thought the same, good for end of Summer/Fall… I used boned large thighs so it had to cook alot longer & it heated up the kitchen lol. (made May 30th)
Is the chicken in the photo boneless?
Yes, we de-boned them ourselves. You can see in the step-by-step photos that they are boneless.
This was really good – I’m not good in the kitchen but this turned out great. I used thighs w/ bones so they took longer to cook. I had a little excess oil from a little skin that was still there (syphoned most out) it & used half & half & xanthan gum to thicken a little more.
Possibly a little sour cream or cream cheese added might zest and thicken it up if you use half&half?
Rice on the side would be good too – if keto, then maybe cauliflower rice.

Adding a little sour cream or cream cheese sounds like a great idea. You can also try melting in some extra parmesan as well.
any advice on how to get the parmesian to melt onto the chicken, rather than melting to the pan? i know some of it well melt, but i seem to loose a lot of cheese.
Using a non-stick pan is the easiest way. You could use other cheese or omit the parmesan and then use the parmesan later on if you want.
could not get the cheese to stay on the chicken it just stuck to my pan 🙁 might try again and omit that and just get a sear on my chicken. Good flavor though
This simple, easy and delicious!! I froze in individual containers to have a work. First couple of pieces the parm cheese stuck to my pan but I just cooked the rest of them a bit longer before turning, worked great. Thanks. Will definitely be making this again
For those who's having difficulty in getting the parmesan to stick to the chicken.
Melt the parmesan on the chicken in the oven before you sear quickly it in the pan.
