The chicken in this recipe is encased in ranch dressing, cream cheese, and shredded cheese and then baked to perfection. Cheesy, creamy, ranchy chicken with cauliflower rice, nobody will even know this is a keto-friendly recipe! Serve it for dinner one night while you have guests over and watch the faces light up with pure deliciousness from this recipe!

Simply prepare all the ingredients and bake in the oven with a few simple steps here and there. Dinner will be ready in 45 minutes!

Yields 4 servings of Keto Cheesy Ranch Chicken and Cauliflower Rice

The Preparation

  • 2 tablespoons butter
  • 4 ounces cream cheese
  • 4 tablespoons ranch dressing
  • 20 ounces cauliflower rice
  • 1/2 cup cheddar cheese, shredded
  • 24 ounces boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • salt and pepper, to taste

The Execution

1. Measure out and prepare all ingredients. Preheat oven to 375F.

2. In a microwave safe bowl, combine butter, cream cheese, and half the ranch dressing. Put in microwave for about 1 minute or until melted.

3. Add the cauliflower rice and shredded cheddar cheese to the melted mixture. Season with salt and pepper to taste.

4. Transfer the cauliflower rice mixture into a baking dish, and spread flat using a spatula.

5. Rub the rest of the ranch dressing onto the chicken along with salt and pepper to taste. Place the seasoned chicken in the baking dish.

6. Drizzle with olive oil.

7. Bake in the oven for 40-45 minutes or until the chicken is cooked and reaches an internal temperature of 165F.

8. Let cool for a few minutes before serving. Enjoy!
