There’s no better way to start your day than with a tasty plate of hash and fried eggs. This keto-friendly cabbage and pesto hash dish uses cabbage and tasty halloumi cheese to replace the traditional potatoes that most hash recipes call for. The cabbage turns into a lovely sweet and silky texture when fried, and goes together wonderfully with the salty fried halloumi cheese.

This recipe is super simple to make. Simply chop up the cabbage and fry it up in a pan with the avocado oil and seasoning. While that’s cooking, chop up the halloumi into bite-sized pieces before frying them up in a separate pan. Once both of these ingredients are cooked, combine them into one pan and then stir through the pesto. While you’re finishing off the hash, place a couple of eggs into a pan and fry them up until cooked. Once everything is ready, place the components onto a plate and serve piping hot.

This cheesy cabbage and pesto hash is the perfect dish to make for breakfast or a weekend brunch. You can whip it up in a few minutes and increase the quantities of the ingredients if you have more mouths to feed. Next time you want to make a scrumptious hot breakfast, give this dish a go!

The Preparation

  • 2 tablespoons avocado oil, divided
  • 200 grams green cabbage
  • 100 grams halloumi cheese
  • 4 large egg
  • 2 tablespoons pesto
  • salt and pepper, to taste

The Execution

1. Measure out and prepare all of the ingredients. Chop the green cabbage into small pieces/slices.

2. In a frying pan over low to medium heat, add the half of the avocado oil and cabbage. Cook for about 5 minutes or until the cabbage turns tender. Remove from pan and set aside.

3. In a bowl, dice the halloumi.

4. In the same frying pan, add the other half of avocado oil and the diced halloumi. Fry the halloumi over low to medium heat for about 2 – 3 minutes or until it starts to get golden brown in color. Remove from pan and keep warm.

5. Crack the eggs into the pan and cook them sunny side up. Remove from pan and keep warm.

6. Add the cabbage, halloumi, and pesto back into the frying pan. Stir all together to get warm.
