Ingredients
  

  • medium zucchini
  • 3 tablespoon low-carb tomato sauce such as Rao's
  • 2 tablespoon ricotta cheese
  • 3 ounce mozzarella cheese

Instructions
 

  • Slice the zucchini into paper-thin rounds using a very sharp knife or mandolin.
  • Spoon one-third of the tomato sauce over the bottom of a mug or small dish.
  • Layer some of the zucchini on top.
  • Carefully spread over half of the ricotta, then repeat with a second layer.
  • Top with any leftover zucchini and the last third of the sauce.
  • Top with the mozzarella.
  • Microwave for 3-4 minutes, depending on the microwave. Enjoy!
