Ingredients
  

  • 6 ounce cucumber
  • ½ cup water
  • ½ cup white vinegar
  • ¼ cup erythritol
  • ½ teaspoon crushed red pepper flakes
  • ½ teaspoon cayenne pepper
  • ¼ teaspoon celery seed
  • 15 drop liquid stevia
  • 2 tablespoon onion chopped
  • salt and pepper to taste

Instructions
 

  • Use a mandoline or knife to cut the cucumbers into very thin slices.
  • Add the water, vinegar, and erythritol together and mix well.
  • Finally, add the remaining spices, liquid stevia, and onion to the container. Season with salt and pepper to taste.
  • Transfer the pickles to a sealed jar and refrigerate for at least 12 hours. Enjoy!
