- 6 ounce cucumber
- ½ cup water
- ½ cup white vinegar
- ¼ cup erythritol
- ½ teaspoon crushed red pepper flakes
- ½ teaspoon cayenne pepper
- ¼ teaspoon celery seed
- 15 drop liquid stevia
- 2 tablespoon onion chopped
- salt and pepper to taste
Use a mandoline or knife to cut the cucumbers into very thin slices.
Add the water, vinegar, and erythritol together and mix well.
Finally, add the remaining spices, liquid stevia, and onion to the container. Season with salt and pepper to taste.
Transfer the pickles to a sealed jar and refrigerate for at least 12 hours. Enjoy!
