Ingredients
  

  • 7 ounce halloumi cheese
  • 16 ounce ground lamb
  • 4 tablespoon fresh mint chopped
  • salt and pepper to taste
  • 2 cup red cabbage chopped
  • 4 large boston lettuce leaves
  • 2 tablespoon olive oil
  • 1 tablespoon apple cider vinegar
  • 4 teaspoon mayonnaise

Instructions
 

  • Grate half of the halloumi (keep the other half for later). In a large bowl add the grated halloumi, ground lamb, chopped fresh mint and salt and pepper to taste.
  • Combine the mixture well with your hands and form into a burger patty (you may need to make multiple depending on how much meat you are using). Cook in a large skillet pan on a medium/high heat for 15 minutes, turning occasionally.
  • Meanwhile prepare the red cabbage slaw - thinly slice the red cabbage and coat well with the olive oil and vinegar, season with salt and pepper.
  • After 10-15 minutes of cooking time (or the burgers are cooked through) add slices of the remaining halloumi to the skillet and turn frequently until brown on both sides. About 2-3 minutes.
  • Assemble your burgers with a lettuce leaf, burger, red cabbage, halloumi slice and mayonnaise.
