1 ½ cup cauliflower rice ¼ cup red onion chopped ¼ cup red bell pepper diced ¼ cup cucumber diced 12 whole black olives ¼ cup lemon juice ¼ cup olive oil salt and pepper to taste 1 cup fresh parsley chopped 1 cup fresh mint chopped 1 medium avocado cubed 2 ounce slivered almonds
In a large bowl, combine the riced cauliflower, red onion, bell pepper, cucumber, and Kalamata olives.
