Ingredients
  

  • 10 ounce goat cheese sliced
  • 1 ounce pumpkin seeds shelled
  • 2 ounce butter
  • 1 tablespoon balsamic vinegar
  • 3 ounce baby spinach

Instructions
 

  • Preheat oven to 400F. Gather ingredients together. Lay the goat cheese slices in a baking dish and bake for 10 minutes.
  • While the goat cheese is baking, heat up a dry frying pan over high heat. Add the pumpkin seeds and toast, stirring frequently, until they start to brown and pop. Be careful not to let them burn.
  • Lower the heat, then add the butter to the pan. Continue cooking until the butter browns, again being careful not to let it burn. Drizzle in the balsamic vinegar, then simmer for a few more minutes. Turn off the heat.
  • Place the spinach on a serving plate. Layer the baked cheese on top, then pour the balsamic butter and seed mixture on top.
