Hi i remembered a dessert my mum used to make us as kids its so light and fluffy great for keto i just changed the sugar to a little stevia and xanthum gum instead of gelatine

375 ml evaporated milk
1 1/2 tbs gelatine powder
1/2 cup water
4 egg whites
1/2 cup caster sugar
1 tsp vanilla essence
1 cup whipped cream *to decorate
1 cup fresh mixed fruit *to decorate
Method
STEP 1 Soften the gelatine in the water for 10 minutes.
STEP 2 Heat evaporated milk in a saucepan until boiling.
STEP 3 Pour the gelatine over the evaporated milk and stir until dissolved.
STEP 4 Add the egg whites, sugar and vanilla essence and allow to cool.
STEP 5 Beat until very thick and white, pour into a 23 cm springform pan.
STEP 6 Set overnight in fridge and decorate with cream and fruit of choice.
Notes
Beating can take up to 5-10 minutes. It doubles in volume
